This Zuppa Toscana is a soul-warming, one-pot recipe inspired by a Tuscan favorite—transformed into a gluten-free, dairy-free, refined sugar-free version aligned with the Prana Method and designed to support your nervous system, gut health, and metabolic balance.

Ingredients (Serves 6)
For the Soup:
4 slices nitrate-free bacon, chopped
1 lb nitrate-free Italian sausage (store-bought or homemade)
1/2 tsp crushed red pepper flakes (optional)
4 medium organic yellow potatoes, diced
1 medium organic yellow or white onion, diced
2 tbsp minced garlic (about 4 cloves)
4 cups organic chicken stock (low-sodium preferred)
1/2 bunch organic kale, stems removed and chopped (about 4 cups)
1 (13.5 oz) can unsweetened full-fat coconut milk
Sea salt and cracked pepper, to taste
For Homemade Italian Sausage (optional):
1 lb pasture-raised ground pork
1 tsp sea salt
1 tsp black pepper
1 tbsp fresh parsley (or 2 tsp dried)
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1 pinch dried thyme
1 tsp crushed red pepper flakes (optional)
Cooking Instructions (Stovetop)
Prepare the sausage (if making from scratch): Combine all sausage ingredients in a bowl and mix well. Set aside.
In a large Dutch oven over medium heat, cook sausage until browned. Add red pepper flakes if desired. Remove and set aside.
In the same pot, cook chopped bacon until crispy. Remove and set aside, keeping the fat in the pot.
Add diced onion and garlic. Sauté for 5 minutes until soft and fragrant.
Stir in potatoes and chicken stock. Bring to a gentle boil and cook until potatoes are fork-tender (10–15 minutes).
Lower heat. Stir in coconut milk and cooked sausage. Simmer for 3–5 minutes.
Add chopped kale and crisp bacon. Stir until kale softens and turns bright green (2–3 minutes). Season with salt and pepper to taste.
Serve warm and mindfully.
Instant Pot Instructions
Set Instant Pot to Sauté mode. Brown sausage, then bacon. Remove both and leave rendered fat in the pot.
Add onion and garlic. Sauté for 3–4 minutes.
Add potatoes and chicken stock. Stir, then seal lid. Set to Pressure Cook on High for 6 minutes.
Allow natural release for 5 minutes, then quick release.
Return to Sauté mode. Stir in coconut milk, sausage, bacon, and kale. Simmer until kale is tender. Season to taste and serve.
